Mighty Nut Recipe (& GIVEAWAY)

Well aren't I just Susie Homemaker these days?! I mean, I am normally NOT the one in the kitchen working on a new creation, but these last couple weeks I have done my fair share of concocting fun recipes.

Thanks to my relationship with Fit Approach (being a Sweat Pink ambassador), I was able to try out a new-to-me product - Mighty Nut. {Peanut Butter & Co just recently launched Mighty Nut, their new powdered peanut butter, and I was one of the lucky ones selected to try it out!}

I have heard many great things about powdered peanut butters, but have never actually given any of them a try.

So far, so good! The hubby and I definitely give Mighty Nut four thumbs up. Now, I am not planning on swapping out our creamy peanut butter on our PB&Js for this, but there are some great ways to add it to your diet for the health benefits (such as the added protein, lower fat, fewer calories, etc).

I decided I would play around with a protein/ power ball recipe with my new powdered peanut butter. Feel free to try my recipe out below or switch it up a bit depending on your tastes and what you have in the cupboard.

Peanut Butter Oatmeal Bites


Ingredients:


Ingredients just asking to be mixed together!

1 cup oats
2/3 cup shredded coconut
2 scoops of Mighty Nut powdered peanut butter (I used the Vanilla flavor)
1/2 cup chocolate chips
2/3 cup honey
1 teaspoon vanilla

Easy peasy and SCRUM-DIDILY-UMPTIOUS!

Directions:


Combine all ingredients in a large bowl.

Feel free to adjust the amounts of the ingredients per your tastes
Mix it together
Adding extra honey because they weren't sticky enough

Roll mixture into 1 inch balls.

Let's be honest, the rolling part was the hardest!
Walt the Wiener Dog watching intensely, hoping some of the yumminess falls on the floor or directly into his puppy mouth
The final product!

Refrigerate for a few minutes until firm.
Transfer bites to an airtight container.

**This is a variation of a PB Granola Ball that I had seen before. Originally it called for 1/3 cup honey, but since that recipe used creamy peanut butter (which acts as a glue) I had to add more honey to keep the bites together.**

Although my bites turned out to look more like a no-bake cookie than a protein ball, they are still DELISH! And one thing I love about them, besides the taste, is the portion control (as long as I can abstain from opening the fridge every 5 minutes to get another one out).

I've been using the Jif peanut powder. Same stuff, but probably cheaper. And it's the only kind I can get in my town, where the grocery game is seriously lacking.

How big is the scoop? I want to make those bites!

I've tried powdered PB, and I like it for recipes like this. Oh,and stir it in greek yogurt for an apple dip.

I have not tried powdered peanut butter before but I think its a great idea for smoothies or to add to protein shakes because it would mix easier. I would love to try the chocolate flavor.

I've never had powdered peanut butter and my first choice would be the original flavor. I bet it would be good sprinkled over oatmeal.

I love powdered peanut butter, it's so great for recipes that call for a peanut butter flavor without the texture and stickiness of peanut butter. I use it for thai peanut sauce, smoothies, flavoring oatmeal, etc. I really would like to try the vanilla for some sweet recipes!

Yes, I love using powdered PB but I've only used it in smoothies and oatmeal. I totally need to make a treat like this one.
