Winning Dinner

I made a winning dinner last night, well winning in Ryan's book - HE LOVED IT. We normally have pasta about once a week (seeing as it is an easy vegetarian meal). Last night I decided I would try to switch it up a little and make some BAKED PASTA. I know, I know, it is pretty much the same thing as we are used to, but Ryan loved it!! It reminded me of my mom's mosticholi (sorry about the spelling) that I used to love. I didn't use any particular recipe, but I'm sure you can guess what I did...

I used about 3 services worth of noodles (elbow noodles to be specific - just what we had on the shelf :) ), about 3/4 jar of spaghetti sauce (I think we used a cheesey tomato sauce), about 3/4 bag of mixed shredded cheese (what we had left from tacos last week), about 3/4 can of mushrooms (what we had left from quesadillas this weekend), and the equivalent to about 3/4-1 lb of fake burger crumble. I cooked the 'meat' added the spaghetti sauce, cooked the noodles, then added that into a 9x13 pan and then tops with the cheese. I cooked it for about 20-25 minutes in 350 degrees (since all I was really doing was warming it, since everything was already cooked, I just left it in the oven till Ryan got home from work). The left overs are in the fridge, so we will see how good it is the second go around :).

I forgot to take pictures of mine (the picture is just one i found online), but maybe next time.
